60ml Gin
30ml Lemon Juice
15ml Cointreau
7.5ml Peach Schnapps
30ml Origin Tea Peach Iced Tea Syrup
1 egg white
Mandarin
Peach
Soda Water
Add all ingredients minus the soda and fruit into a tin, shake vigorously for about 25 seconds to emulsify the egg white. Once you’ve got a nice foamy consistency, open up the tin and muddle some mandarin slices and peach slices into the mix. Shake again with ice. Double strain into a highball glass with ice, top up with soda water and garnish.
This drink was part of the Origin Tea Bartender competition. This cocktail is a bit of a sidecar twist on a generic Gin Fizz that incorporates fresh peach, lemon and mandarin giving it a bright, tart, fruity flavour bomb as well as the fresh peach tea flavours that are more of a bold sweetness. Working with an Australian contemporary gin that allows all the flavours to play on even ground, this drink doesn’t just taste good, it looks amazing and has a unique texture and mouth feel.
